COOKING TIPS:
Soak celeriac in warm water to help loosen soil from the skin. Scrub throughly and peel. Boil celeriac whole or in slices, use it instead of celery or try roasting in the oven.

STORAGE AND HANDLING:
Cut the stalks off the root and store separately. Use the stalks as you would traditional celery. Do not wash celeriac root before storing. Store it unwashed in the refrigerator in a plastic bag for up to a month. To wash celeriac, let it soak in warm water then scrub with a vegetable brush. If desired peel. Peeled celeriac will darken quickly so keep in water or toss with lemon juice to slow the discoloration.

Celeriac is high in carbohydrates like other roots and has high levels of phosphorus, potassium and sodium.
