Lima beans and mushrooms

  • 3 tablespoons real butter
  • Freshly ground pepper to taste
  • 1/4 cup thinly sliced celery
  • 1 pound fresh lima beans, cooked and drained
  • 1/2 pound fresh mushrooms, sliced
  • 1/2 teaspoon salt
  • 1/3 cup heavy cream

Melt butter in skillet over medium-high heat. Add celery and sauté for 3 minutes, stirring frequently. Add mushrooms and sauté, stirring, for 3 or 4 minutes. Sprinkle with salt and pepper. Combine lima beans, cream, and celery-mushroom mixture in a saucepan. Bring just to boiling point. Adjust seasoning if necessary. Serve immediately. Serves 6 to 8
