Rutabaga

IN SEASON:
October – November

COOKING TIPS:
Scrub rutabaga thoroughly and it is not necessary to peel it. Use it like a potato – boiled, baked, roasted, with roasts or stews.

STORAGE AND HANDLING:
Rutabagas will keep for a week at room temperature. They will keep a month in the fridge in a plastic bag. Scrub well before using and unless it is absolutely necessary do not peel because many nutrients are close to the skin and are lost if the rutabaga is peeled.

NUTRITIONAL DETAILS:
Rutabaga is high in carbohydrates, vitamins A and C, and some minerals, particularly calcium. Rutabagas belong to a handful of cruciferous vegetables believed to be effective in cancer prevention. Rutabagas will store adequately at room temperature for up to a week, or refrigerated in plastic bag or hydrator for up to 1 month.
