Leeks

IN SEASON:
August – November

COOKING TIPS:
Trim roots and most of greens off leek. Cut in half lengthwise and rinse under water to remove soil from between the layers. Use leeks instead of onions in sandwiches, salads, soups and breads.

STORAGE AND HANDLING:
Keep leeks in an air tight plastic bag in the fridge so that they do not flavor your whole refrigerator. Leeks will keep for a couple weeks in the fridge. When you wash your leeks, rifle the layers to clean out any soil that may be in between the layers.

NUTRITIONAL DETAILS:
Leeks are high in potassium and calcium and also contain some iron, magnesium and phosphorus.
