Peas

IN SEASON:
mid-June – mid-July

COOKING TIPS:
Trim off tops and tails of peas and shell the shelling peas. Eat raw or cooked; peas are tasty either way. Add to salads, soups, casseroles or steam, sauté or stir fry.

STORAGE AND HANDLING:
Keep peas in a plastic bag in the refrigerator. Peas will convert their sugars into starches within days of harvest so for the sweetest peas eat them within 4-5 days of harvest. Shelling peas must be shelled before eating! Sugar snap and snow peas can be eaten pod and all.

NUTRITIONAL DETAILS:
Peas are a high protein, high carbohydrate and high fiber food. The also contain vitamins and minerals such as vitamin K and iron.
