COOKING TIPS:
Spinach contains oxalic acid which is not harmful but it is best to lightly cook spinach or eat it raw in small amounts. Try spinach on sandwiches, in soups, sautés, or just wilted by itself.
STORAGE AND HANDLING:
Store spinach in an air-tight plastic bag in the refrigerator. Spinach will keep for 1-2 weeks in the fridge.
NUTRITIONAL DETAILS:
Spinach is high in chlorophyll, vitamin A, vitamin C, and contains many valuable minerals. However because it is high in oxalic acid it does tend to bind the naturally occurring calcium and prevent its absorption.
