Rhubarb bread
- ¾ cup honey
- ½ cup oil
- 1 egg
- 1 cup buttermilk, yogurt, or sour milk
- 1 T. soda
- 2 1/2 cups whole wheat flour
- 1 t. salt
- 1-2 cups rhubarb, diced
- ½ T. vanilla
- 1/2 cup chopped nuts
- Topping: 1/2 cup brown sugar, 1t.cinnamon, 1 1/2T butter
Preheat oven to 325 degrees. Mix honey and oil, add egg and beat well. Dissolve soda in buttermilk, and then set aside. Mix salt and flour and add to honey oil mixture alternately with the buttermilk. Stir in rhubarb, vanilla, and nuts. Pour into a 9×5 greased bread pan. Combine topping ingredients and sprinkle over the batter. Bake @ 325 for 1 hour.
* If you are using white flour decrease soda to 1 t.
