Scandinavian cabbage soup
- 2 cups cabbage, chopped
- l cup onion, sliced
- l cup celery slices
- 1 cup peas
- l cup thin sliced carrots
- 2 cups creamed corn
- 1 stick butter
- 2 1/2-3 cups milk
- 1 tsp salt
- 1/4 tsp pepper
- 1 tsp thyme
- 1/4 tsp garlic powder or fresh garlic to taste
- 1 1/2-2cps shredded cheddar cheese
Sauté cabbage, onions, celery, peas, and carrots in butter until tender, stirring frequently. Add milk and seasonings. Heat over low; add cheese, stirring until melted.
